As Food Service Director at the Student Union, I manage the largest piece of retail business on campus consisting of two floors of service ranging from a Starbuck’s Freshens Café to a Sub Connection as well as a host of other formats including catering. We serve approximately 15,000 meals a week in this location and have the longest hours of operation in all Hospitality segments across campus.
I graduated from Johnson and Wales College in Providence, RI and spent time working at some exclusive restaurants in Chicago as well as upstate New York. I arrived on campus in 1987 working as an Executive Sous Chef at Russell Sage Dining Hall and have held many positions on campus since that time. Most recently, I’m designing an on Campus delivery system out of the Rathskeller level and trying to improve not only the quality of the food selections, but healthy choices as well. I am also working with several others on our management team to improve our selection of products to promote Pride of New Your in our campus Convenient store. I look forward to implementing long range goals for additional services, facility improvements and expanded offerings in the months ahead.
